The following analysis is from my personal research and reflects my attempts to consolidate information from different sources.
George and Ann Sparling appeared on the 1861 United Province of Canada Census of St. Vincent Twp., Grey County, Canada West (modern Ontario), enumerated 13 January 1861. George was described as a farmer. Their children, George, Amelia and Sydney, were listed as living with them. The household also included a married labourer, James Johnson, who may have been the husband of Amelia. Note that age is given as the next birthday, and households were not explicitly identified.2
The following analysis is from my personal research and reflects my attempts to consolidate information from different sources.
I do not think that this couple, from the 1861 census is the same as John and Anne J. Sparling in the 1851 census. The children in the 1851 census, Eliza J., George E. and Libby A. do not align with thos of George and Ann in th e1861 census.3
